The One Cookie Company was built out of necessity—and became an obsession.
What began as a personal pursuit grew into a belief that the best baked goods bring people together. Driven by a passion for baking and a refusal to accept compromise, we set out to create a flour blend capable of delivering the flavor, texture, and comfort people love—without wheat.
The result is our proprietary wheat-free flour blend, the foundation of every recipe we create. It's what allows us to craft baked goods that are meant to be shared, celebrated, gifted, and enjoyed by everyone at the table.

Meet the Founder — Ava Gordon
She Didn’t Set Out to Create a Wheat-Free Brand.
She set out to create baked goods worth craving.
Ava’s One Cookie Company is a maker of nostalgic, made-from-scratch desserts designed to make you slow down, reminisce, and savor the moment—with one important twist: they’re all wheat-free.
Living with significant gluten sensitivity meant constantly facing a choice between physical comfort and the enjoyment of great baking. Too often, gluten-free products felt like a compromise—dry, dense, crumbly, or defined more by what they lacked than by the experience they delivered.
She wanted something different. She wanted baked goods that were simply, undeniably good.
That pursuit led Ava into years of experimentation with alternative flours and starches, studying how each ingredient contributed to structure, softness, moisture, texture, and flavor. Through that process, she developed a proprietary wheat-free flour blend capable of creating the richness, texture, and indulgence people had come to expect from traditional baking.
The result was more than a recipe. It became the foundation of an entire bakery.
Today, every cookie, brownie, muffin, coffee cake, and dessert we create begins with that same proprietary foundation—and the belief that wheat-free baking should never mean settling for less.
